and now dessert!

If you know me at all you know I have a major sweet tooth, therefore making dessert my favorite part of any meal. Why all this dessert talk? Our wedding cakes are ordered!
We went to Sweet Stuff in Kyle and there were easy, so sweet, and affordable!
The wedding cake is white, with raspberry filling and butter cream frosting. It will be three layers and simply decorated-white with small details in white and fresh flowers. The groom's cake is a chocolate lover's dream...lets just put it that way. Oh and the design...you'll have to wait and see!

The big day is getting closer and closer and I'm getting more and more excited!!!

And dinner is served....

As Jason would say, and many others would agree: the food is VERY important on any special occasion. I would have to second that and when I started planning this shin-dig I said one of the most important things was the menu. There is nothing worse than going to a wedding and eating an average (at best) meal, which you know cost someone a WHOLE lot of money. My decision came easily...I'm a true Texas girl and love me some fajitas and margaritas! Well, where do you go to get the best of these things? One word-PAPPASITOS. One of my all time favorite restaurants will be a part of my special day...perfect. Not to mention, they are obviously awesome at the whole catering thing because they came HIGHLY reccommended from everyone and everywhere...and you can't beat thier prices.

My guests will be enjoying a buffet of:
Chicken and Beef Fajitas
Rice and Charo beans
Fresh chips and salsa
and....all the fixings!

Oh and one last thing, HAPPY BIRTHDAY NINI!! You deserve a shout out for not only being my favorite Aunt but also for being an avid reader! :) Love you!

It's been awhile but don't you worry I have not been sitting around doing nothing...I have been getting things done!!


I went home a few weekends ago and had all kinds of wedding planning fun! My wonderful Mom had a brunch, which was fablous as usual, and I had a good 3 hours of wedding talk with my dearest ladies!! Later that day we went to pick out bridesmaid and flower girl dresses. We got right down to business and found the perfect FUCHSIA get-ups!!

COMING TO A MAILBOX NEAR YOU

In approximately a month you luck few :) should receive a lovely magnet from us...to stick on your fridge, where it will stay FOREVER...if you're anything like me and never move anything you put on your fridge.
Yep you got it, a good ol' Save the Date magnet!! I have quickly realized why these nifty things are so popular. A: they are fun to design...or to pick a design already made by someone more creative than yourself and B: because if you don't make your date very well known people will start booking up!!

I had no clue my friends and family had obligations that didn't involve me. :) Well now that the 'only child' has come out in me and will leave you with this....

Shoes!

From Dorothy using them to get home to Carrie Bradshaw using them to make a fashion statement...shoes are important. As I do understand this I must admit... am not that into shoes...call me crazy. My BFF Natalie, on the other hand, is into shoes. She is a self-proclaimed shoe addict and just the person I needed when carrying out my recently wedding task. I bought the shoes I will be wearing when I become Mrs. Jack! It was easy...one quick stop at DSW and:

Nightmares

I tend to have vivid and detailed dreams. I also have a tendency to have these dreams around big events, for example the first day of school or a vacation. Well what do ya know...I started having dreams...or nightmares...about my big day.

The first one went a little something like this....it was my big day....and there were about 10 people in attendance. To be nice, my Mom said "Well maybe they are lost or running late" but, very bluntly, I said nope, they're just not coming. Soon after that someone said, "maybe no one's here because the invitation said the 15th and it's the 10th" I was horrified...I was having my wedding on the wrong day! All of my family and friends (well only 10 of them) were attempting to tell me it was ok and that I should just go ahead and have it, but I was not agreeing.
Not sure how it ended...I hope we postponed it to the RIGHT day.

A few nights later I had ANOTHER one. This time I was getting ready to walk down the aisle and everything was perfect....except that my bridesmaids had no dresses. I suddenly realized I had not picked out or had them buy anything to wear. A few of them offered to wear the nicest outfit they packed for the weekend but I said I wanted them to match. Right as I was having someone run to Target the dream was over...I woke up.

Let's hope this is not a trend...though I'm sure it is...and they will probably get more and more intense the closer we get!!

The Dress


One of the most important things about a wedding is the DRESS, so I have been told. Well, go ahead and check that off my list!!

A few weeks ago my DEAR Mom, friends, and Goddaughter came to town and we went wedding dress shopping! If you know anything about me you know I can be VERY indecisive. Going into shopping I had a solid list of things I didn't want...including but not limited to: too long of a train, too much sequence, any lace (of any kind), and too much poof.

As far as what I DID want, well I wasn't as precise...I knew I wanted it to be simple and appropriate for an outside, casual wedding. I tried a few on but knew I had found the one when I came out and every in my party, almost in sync, gasped. It was the reaction I was looking for. What made it even better is that I agreed with them...I loved it! After a few minutes of my indecisiveness rearing it's ugly head I made my decision...it was going to my WEDDING DRESS. I do have to admit it was just a little crazy buying a wedding dress, but once again exciting!

The dress is now living in our hall closet with the vacuum cleaner. It has no idea what I have in store for it in 9 short months!

What's in a name?

First a well known fact: On April 16th 2011 I will go from Amber Lucas to Amber Jack.
Less known fact: My new name is more than just a new name...it's also a fish.
Not just any fish but an Amberjack. You might ask yourself what is a Amberjack...well here ya go:

Amberjack: the name of 3 species of Atlantic fish of the Carangidae family, which includes the jacks and pompanos. They are found around Florida in natural or man-made reefs.

Oh, you want some fun facts about Amberjacks? Glad you asked....

*There are two United States Navy submarines names USS Amberjack.
*Bela Fleck and the Flecktones (I'm sure they're great) have a song named "Amberjack."
*There is a off shore oil platform owned by Stone Energy named "Amberjack" in the Gulf of Mexico.
*They taste best grilled or broiled with lime-butter and seasoned salt. :)

LO-CAL

Let me start by saying: Summer School....that's who you can blame for my lack of posting.

Now that that's out of the way on to what I promised LONG ago...more details!!

We have choose to have our Wedding Weekend Getaway at...drum role please.....
Hummingbird House. It is everything I was looking for and more!! It has a river, it has lots of lights and lanterns, it has pretty tent, BOY does it have flowers and trees, it has a dance floor, and plenty of room for all our guest! Oh and, of course, it is outside!

It's in South Austin, close to your house, and just perfect! We will have the entire place from Friday at noon to Sunday at midnight and yes, we plan to use all of our time! Danny, the owner, is just great and I think we are going to work together just fine.

Now that we have a date AND a location I couldn't be more pumped!!

My Vision

Well I have to admit I have not done much on the wedding front recently. I have been pre-occupied with things like work and 3 day weekends BUT I am attempting to get back on track! This weekend we are going to be a part of my dear friend Brittany's wedding and I plan to take notes.
I have been talking to many people lately about their own wedding or wedding experiences they have been a part of and I have heard all kind of things! It got me thinking about what exactly I want out of my wedding and, even more, what I want people to remember about it. The answer I came up with is that I don't want a wedding day, I want a weekend. Yes, I know I am an only child and want it all...but hear me out!I don't want the day to be all about me, I want it to be a celebration of us and our wonderful friends and family. I have quickly realized that A LOT of money and energy go into creating a wedding and I want to make sure everyones hardwork and contributions are worth it!! So here's my vision: A stress-free getaway for every special person in our lives to come together, celebrate, love, and enjoy each other! It will not simply be a wedding but a great opportunity to have everyone together for a momentous occasion!

Location update: I think we found a winner but we have a few more places to look at. I want to pick an official date by the end of June.

Location, Location, Location

As they always say....it's all about the location. It would only make sense to start there...I do need a physical space to have the wedding. I started looking on the Internet about a week ago and since then I have went to approximately 100 different website, some many times over. There are SO many venues just in Austin only, which sounds great but, really isn't. It's exhausting looking at all these places...and when I say looking...I mean looking at their websites. I have visited one place and have four more to visit this week. There are only a few things I am looking for:
-outside...not outside a building but outside in nature
-wildflowers and trees...the more the better...and possibly a river/creek
-lots of lights and lanterns
-maybe a pretty tent of some kind
-room for parking and 100-150 of my closest friends :) and lastly....
-A dance floor...because what's a party without dancing?

Seems reasonable enough...we'll see!

WELCOME

Well HELLO!
So if you haven't heard....I'm engaged!!! As of April 2nd 2010 Jason, as Beyonce sings, put a ring on it....my finger that is. I now have officially started my journey to putting a ring on his finger! As of today I have begun planning my...I mean our :)...BIG day!! We initially thought about flying away and coming back married but, very recently decided to NOT to do that. We are going to have an actual wedding and I am, surprisingly, excited! Let me explain-I was not the 10 year old girl planning her future wedding....never really gave it much thought at all. So lets just say...I have a lot to do. I have heard many horror stories about planning a wedding (there is even a whole reality series ie. Bridezilla) and have even had a few people tell me to elope....but I am determined to make this a fun (or at least entertaining) experience! I also plan to document it all...the good, the bad, and the ugly! I have been patientily waiting for a reason to create a blog....thank goodness I got one! This blog is for everyone to follow along with me as I, along with MANY others, create the wedding of a, or at least my, lifetime!!!Let the planning begin!
